Wedding Anniversary Cakes

It used to be a tradition that a bride and groom would keep the top tier of their Wedding Cake for their first Wedding Anniversary or for the Christening of their first child. With many Wedding Cakes now being sponge rather than fruit, they need to be eaten immediately and can’t be kept. I’ve heard of some people freezing their top tier but I’m not sure how well it would keep and it would certainly have to be redecorated. Last week I made two cakes to celebrate a First Year Wedding Anniversary, as a gift for each of the two families. They were chocolate sponge (3 layers) with chocolate fudge filling and vanilla bean buttercream around the outside, then covered in white fondant. They were then decorated to match the Wedding Cake to celebrate the anniversary of a wonderful Wedding day – what a lovely idea!
